Prep Time: 10 minutes
Serves: 4 servings
Ingredients:
3 ears fresh corn, silks and husks removed
1 red bell pepper diced
1 cup quartered grape tomatoes
1-½ avocados diced
2 tbsp. extra virgin olive oil
1 tbsp. apple cider vinegar
½ lemon
½ tsp. sea salt
¼ tsp. chili powder
Black pepper to taste
Directions:
Cut the corn from the cobs.
Place corn, bell pepper, grape tomatoes and avocado in a large mixing bowl.
Add olive oil, vinegar and spices to bowl and mix gently to evenly distribute.
Cover bowl and let sit in refrigerator for at least one hour before serving.
